Achari Baingan Recipe | Eggplant or baingan cooked in spicy pickle masala. Serve achari baingan with hot steaming white rice.

Pickles or achar is my weakness. They are always present on my plate weather lunch and dinner. The addiction for pickle comes all the way from my childhood. My mom always makes achar/pickles at home and hardly ever bought from market. She mostly makes mango pickle, Lemon Pickle, Chilli Pickle and mixed pickle that last for whole year. Even now whenever I visit her she always packs me bottles of fresh pickles. I love this achari baingan recipe as it brings me the same pickle taste as part of regular meal 🙂

Talking about eggplants, I love to cook them as part of my regular meal as they are versatile and mingle well with other veggies. This achari baingan is spicy, tangy, flavorful and have beautiful aroma of pickling spices. In achari baingan , eggplant or baingan are not pickled rather they are made with the same spices that we use for making north Indian pickles. You can serve these achari baingan with chapati, roti, pori or rice. They taste yummy with anything.

Achaari Baingan

Ingredients
  

Masala

  • 1 tsp Cumin Seeds
  • ½ tsp Nigella Seeds
  • ½ tsp Fennel Seeds
  • ½ tsp Mustard Seeds
  • ½ tsp Fenugreek Seeds
  • 8-10 Garlic Cloves crushed
  • 1 inch Ginger crushed

Tomato Puree

  • 3 Tomatoes roughly chopped

Brinjal

  • 6 Small Eggplant
  • 1 tsp Oil

Aachari Baingan

  • 2-3 tbsp Oil for gravy
  • ¼ tsp Asafoetida
  • ½ tsp Mustard Seeds
  • ½ tsp Fennel Seeds
  • ½ tsp Nigella Seeds
  • Crushed Ginger Garlic
  • ½ tsp Turmeric Powder
  • Tomato Puree
  • 2 Dry Red Chillies
  • 1 tbsp Coriander Powder
  • 1 tsp Red Chilli Powder
  • Fried Brinjal
  • Salt
  • ½ cup Water

Instructions
 

Masala

  • Heat pan at medium low heat. Add cumin seeds, fennel seeds, nigella seeds, fenugreek seeds and mustard seeds.
  • Roast them for few minutes till you get nice roasted aroma.
  • Transfer them in a bowl and let them cool town.
  • Once cool make coarse power and keep it aside.

Tomato Puree

  • In a grinder add tomatoes and grind to make paste of it and keep it aside.

Brinjal

  • Cross slit brinjal or baingan so that their stems remain intact and apply little salt inside it.
  • In a pan add oil and add slit brinjals in it and sprinkle some oil from the top as well.
  • Lower the flame, flip the brinjal, cover and cook till half done.
  • Once half cooked remove it and keep it aside.

Aachari Baingan

  • In the same pan add oil next add mustard seeds, fennel seeds, and kalongi.
  • Now add ginger garlic paste, sauté it till aroma comes.
  • Now add the grounded powder, turmeric powder and mix it nicely.
  • Next add tomato puree, dry red chillies and mix well.
  • Cover and cook till the mixture releases oil while stirring in between.
  • Next add coriander powder, red chilli powder and mix well.
  • Now add eggplants/ brinjal mix everything and cook eggplants in achari masala for 3-4 minutes.
  • Stir them couple of times so that masala do not get stick to the bottom.
  • After almost 5 minutes add water and mix everything.
  • Lower the flame cover and let them cook for 2 minutes.
  • After 2 minutes turn off the heat and serve.
