Vegetarian tortilla soup : famous easy to do Mexican soup

Ingredients
  • Tomato: 1 large,
  • Chopped onion: ¼ cup,
  • Garlic clove: 1,
  • Green chilly: 1,
  • Chopped carrot: ¼ cup,
  • Corn kernels; ¼ cup,
  • Dried oregano,
  • Pepper powder,
  • Salt,
  • Cooking oil,
  • Vegetable stock or Chicken stock: 3 cups
  • For garnishing:
  • Cheese: ¼ cup,
  • Chopped avocado: ¼ cup,
  • Tortilla chips: 8-10
  • Chopped Cilantro (coriander leaves) : 2tsp
Instructions
  1. Heat the pan at medium heat and roast one tomato,one clove unpeeled garlic and one green chilly.
  2. Turn over the veggies after some time so that they get roasted from all the sides.
  3. When the veggies are nicely roasted and little tender take them out.
  4. Take out the garlic peel and grind everything along with some vegetable stock.
  5. In a big pot heat some oil at medium heat.
  6. Add onions and cook for a minute.
  7. Now add chopped carrots and saute for some time.
  8. Now add corn kernels and saute for a minute.
  9. Add tomato ,garlic and chilly mixture and rest of the vegetable stock.
  10. Now add little salt, pepper powder and dried oregano in the soup.
  11. Mix every thing together and boil the soup for 8- 10 minutes.
  12. Take out the soup after 10 minutes and now we will garnish the soup.
  13. For garnishing we'll put some chopped avocado, some cheese, tortilla chips and chopped coriander.
  14. Vegetarian tortilla soup is ready. Serve hot:)
Notes
1. Do not roast the veggies for a very long time otherwise they will become bitter.We just want a little bit of smoky flavor and taste.
2.You can use vegetable stock, chicken stock of soup cube in this soup.
3. You can add water but it will not give the same results.
4. Serve the vegetarian tortilla soup hot and garnish the soup only when it is hot and you are ready to serve it.
