Warqi Paratha: Soft melt in mouth multi layered paratha is sqaure shape Indian flat bread

Ingredients
  • All purpose flour(maida): 1 cup,
  • Whole wheat flour(atta): 1 cup,
  • Baking soda: ⅛ tsp or 2-3 pinches,
  • Sugar: 1tsp,
  • Salt: 1tsp,
  • Milk: almost 1 cup,
  • Oil,
  • Dry flour to roll the chapati
Instructions
  1. In a bowl add all-purpose flour, wheat flour, baking soda, sugar, salt and mix everything.
  2. Add little milk at a time and knead smooth and soft dough.
  3. When the dough is ready take little oil in your palm and rub it over the dough.
  4. Cover this dough with moist kitchen towel and cover the bowl.
  5. Let the dough rest for 15-20 minutes.
  6. After 15-20 minutes take out the dough and knead it once again.
  7. Divide the dough in 6 pieces and roll them to ball shape.
  8. Roll one ball to big chapatti, spread little oil all over the rolled chapatti and sprinkle dry flour on it.
  9. Now fold the chapatti one third from one side and fold it one third from other side so that they overlap each other.
  10. Again spread little oil and sprinkle dry flour on folded chapatti.
  11. Fold it again one third from both side. Now you will get the square shape dough.
  12. Do same with all the rolled balls.
  13. Cover the squares with wet towel and let them rest for 15-20 minutes.
  14. After 20 minutes take one square and dip it in dry flour and roll it with gentle hands.
  15. Heat the tawa or pan at medium heat and put rolled paratha on it.
  16. When you see bubbles turn it over and apply some oil.
  17. Spread the oil and gently press the paratha for even cooking.
  18. Flip it over again and spread some oil on this side.
  19. Cook till warqi paratha get nice brown spots on both the side.
  20. Warqi paratha or multi layered paratha is ready to serve.
Notes
1. Knead soft and smooth dough that will make soft parathas.
2. While rolling try to roll evenly and gently from all the sides that will give nice puff to parathas.
3. Cook layered paratha or warqi paratha on medium flame so that they get cooked all the way to inside.
