Sweet Paratha with coconut Stuffing- easy dessert which can be done in minutes

Ingredients
  • ---Paratha Base---
  • Wheat Flour (Atta): 1 cup,
  • Water: Almost ½ cup,
  • Ghee or butter for cooking,
  • ---Filling Mixture---
  • Grated Dry Coconut (nariayal): ½ cup,
  • Grated nuts (Almond, Cashew, Walnut): ¼ cup,
  • Fine Sugar: ¼ cup
Instructions
  1. In a bowl add flour and water and knead soft dough.
  2. Cover the dough and let it rest for 15 minutes.
  3. Mix together grated coconut, sugar and nuts in a separate bowl.
  4. After 15 minutes take out the dough and knead it once again.
  5. Now divide the dough in four parts and make balls.
  6. Take one ball and roll it to a small disc.
  7. Place generous amount of stuffing in the middle of the rolled disc.
  8. Close it by pinching towards the middle.
  9. Roll out carefully both sides using dry flour for dusting to thick parathas.
  10. Cook over medium hot tawa using butter or ghee.
  11. Gently press with the spatula for even browning.
  12. Flip them over and cook from other side till brown spots appear.
  13. Sweet paratha is ready.Serve them hot with cold yogurt dip.
  14. For yogurt dip mix together yogurt, sugar and sprinkle some left over stuffing on it.
Notes
1. I have used ½ cup of water for 1 cup of flour, you may need little more or less.
2. Leaving the dough for rest make a smooth dough.
3. You can also use little khoya or mawa while stuffing it gives very smooth taste.
4. If you do not have dry coconut use fresh coconut, just sauté it in little butter till it become dry. Let it cool down then mix it with sugar and nuts.
5. Instead of using butter you can also use ghee in this recipe.
6. Do not roll parathas very thin otherwise stuffing will come out.
