Egg fried Rice | How to make Egg Fried Rice – Lunch and Dinner Recipes

Egg fried rice is a quick chinese style fried rice recipe which you can make at home in minutes. This super delicious, quick and easy egg fried rice does not need many ingredients. Loaded with veggies, folded in eggs this fried rice recipe is a must try, at least once.


Fried rice, pulao, biryanis are one pot recipes which you can make in jiffy. Almost once in a week I make egg biryani, coconut pulao or this egg fried rice either for lunch or dinner. They do not require much preparations and are healthy and delicious.

If I have left over boiled rice I sometimes use it to make these egg fried rice or schezwan rice or rice pakoras. And talking about today’s recipe I just love it. Full of flavors, yummy and ready in minutes. Here you can use any vegetables which is available at your place.


This egg fried rice is very different. Here we will use eggs twice. First time we will make scrambled eggs and second time we will pour egg mixture on fried rice. This will make each and every rice grain coated with egg. Which gives them nice flavors and taste.

Here are few tips to make Egg fried rice:

1. Rice should be only 80 percent boil. If it very soft egg fried rice will become very mushy.
2. I have used beans, cabbage and carrots you can also use mushrooms, capsicum, celery.


3. Make sure to chop vegetables of same size so that they can be cooked at same time.
4. To get smoky flavors in egg fried rice cook it on very high flame.
5. Do not overcook the rice after pouring egg mixture.

Ingredients
  • Fine chopped ginger: ½ “
  • Fine chopped green onions: 1tbsp
  • Fine chopped carrots: ¼ cup
  • Fine chopped cabbage: ½ cup
  • Fine chopped onions: ¼ cup
  • Fine chopped beans: ¼ cup
  • Soya sauce: 1tsp
  • Vinegar: ½ tsp
  • Eggs: 2
  • Green chili sauce to taste
  • Salt to taste
  • Oil
  • Milk: 1 tbsp
  • Boiled rice: 2 cups
Instructions
  1. Break one egg in a bowl and add little salt. Mix well and keep it aside.
  2. In another bowl take eggs, milk and little salt. Mix well and keep aside.
  3. Heat pan at medium heat and add oil.
  4. Now take egg and salt mixture and pour it on pan.
  5. Quickly make scrambled eggs and take it out in a bowl.
  6. Now heat the pan on high flame and add 2 tbsp. oil.
  7. Add ginger and give it a quick stir.
  8. Now add onions and sauté for a minute.
  9. Now add carrots, cabbage and beans and cook for another minute.
  10. Add rice, soya sauce, vinegar, green chili sauce and salt.
  11. Mix well and pour second egg mixture all over the rice.
  12. Saute well and cook for 2 minutes. Mix well.
  13. Switch off the heat and add scrambled eggs and fine chopped green onions.
  14. Egg fried rice is ready. Serve hot.
