Tinda Masala Recipe: Delicious homey sabzi made with tinda and potatoes in onion, garlic and creamy milk gravy. This masala tinda can be made for parties, potluck or for everyday meal. It goes very well with parathas and chapatis.

Tinda is a popular vegetable in North India and made in many ways. Here in US it is not so easily available but whenever I get it I never miss a chance to buy it. Tinda or tinday is also known as Indian baby pumpkin or Indian round gourd in English. People often confuse it with tendli or kendru which is very different from tinda. Tinda is a very mild vegetable and does not have much flavors of itselt but it mingle very nicely with other veggies.


I have already posted the recipe of bharwan tinda which is dry version of tinda. Today I am posting one of my favorite tinda masala recipe with gravy.

I learned Punjabi tinda recipe from my mom. This tinda ki sabzi is very comforting and packed with flavors and taste. Making this tinda recipe is simple but is done in few steps.

So lets start step by step process of making Tinda Masala

1. Cut potatoes and tindas in circles and wash them.

2. Chop onion and garlic separately in small pieces and keep them aside.

3. Heat 2 tsp. of oil in a pan at medium heat and add tinda, potatoes, little salt and mix them nicely.

4. Cover the pan and let the veggies cook for some time till they are tender. Turn them couple of times so that they do not stick to the pan. Here make sure veggies should not get mushy while cooking.

5. Once veggies are cooked, take them out in a bowl.

6. In the same pan add remaining oil at medium heat. Add cumin seeds and chopped garlic and saute them for few seconds.

7. Now add fine chopped onions, some salt and cook till onions turns brown and lose oil.

8. When you see onions are loosing oil, add chilly powder, turmeric powder and coriander powder and mix them well.

9. Now change the heat to medium low and add little boiled milk at a time and stir continuously till the mixture loses oil again.


10. Now add roasted potatoes and tindas to masala and mix gently. Cook for a minute.

11. Now increase the heat to medium and add 1/ 2 cup of water and let the veggies cook for another 2-3 minutes.

12. After 3 minutes switch off the heat.

Tinda sabzi with potato is ready to serve. Garnish it with green chilly and coriander leaves.

Ingredients
  • Tinda: 6-7,
  • Potato: 1 big or 2 small,
  • Cumin seeds: 1 tsp,
  • Fine chopped garlic: 1tbsp,
  • Fine Chopped Onions: ¾ cup
  • Turmeric/ haldi powder: ¼ tsp,
  • Red chilly powder: ½ tsp,
  • Coriander/ dhania powder: 2tsp,
  • Boiled Milk: ½ cup,
  • Oil: 3 tbsp,
  • Salt and water

Notes
1. You can use fresh of frozen tinda in this Tinda masala.
2. If you are using frozen tinda, saute potatoes first and then add tinda and follow rest of the recipe as it
