Instant Rava Vada Recipe | Suji Medu Vada Recipe | This instant rava vada is easy, delicious and can be made in minutes. Do try it and I am sure you will love it.

Vada is often made with lentils, potato but today’s dish is made with rava or sooji. I usually serve Suji Vada as breakfast or snack with spicy coconut chutney. This rava vada or sooji vada can be made instantly and does not  require any soaking or grinding. Just mix all the ingredients and fry them. I have used grated coconut, fresh curry leaves and coriander leaves, freshly ground coarse mixture of cumin and black pepper in making this suji vada or rava vada. These fresh ingredients give suji vada very nice flavors and aroma. You can also add fine chopped bell peppers, grated carrots along with fine chopped onions to give them different taste. Unlike medu vadas , rava vada is easy and quick to do. You can serve them with sambhar or spicy coconut chutney. Rava Vada

Ingredients
  

Chutney

  • 2 tbsp Peanuts
  • 1 Garlic Clove
  • 1-2 Green Chilli
  • ¼ cup Coconut grated
  • ½ cup Coriander Leaves
  • 2 tbsp Hot Water
  • Salt

Vada

  • 1 cup Rava
  • ¼ cup Coconut grated
  • 2 tbsp Coriander Leaves fine chopped
  • ½ inch Ginger fine chopped
  • 2 Green Chilli fine chopped
  • ½ cup Onion fine chopped
  • 6-7 Black Pepper Corn
  • ½ tsp Cumin Seeds
  • 8-10 Curry Leaves fine chopped
  • ½ cup Curd
  • Salt
  • 2-3 tbsp Water
  • 2 pinch Baking Soda

Instructions
 

Chutney

  • In a grinder jar, put together all the chutney ingredients. Grind them to paste.

Vada

  • Grind cumin and pepper corns to coarse powder.
  • Now in a bowl add rava, cumin & pepper mix, curd, coconut, onion, coriander leaves, ginger, chili, curry leaves, salt and mix well.
  • Next add water and make a thick batter off it.
  • Cover and keep them aside for fifteen minutes.
  • After fifteen minutes mix baking soda to suji batter and mix well.
  • Now wet your hands with water and give shape to your vadas.
  • Deep fry them in medium hot oil till they become golden brown and crisp.

Shilpi’s Quick Tricks
  • Use fresh ingredients like fresh coriander curry leaves, freshly ground cumin an peppers.
  • They make vadas very flavorful.
  • Make thick batter. Mix water as needed.
  • Do not make batter runny otherwise it will be difficult to shape vadas.
  • Add soda only when you are ready to fry vadas.
  • Fry them at medium flame so that they can be cooked all the way to inside.
