Multigrain Breakfast Recipe | Adai Uttapam | Mix Dal Uttapam Recipe | Adai Recipe or Mix Dal Uttapam Recipe is a very famous traditional recipe made from very basic ingredients available at home.

Adai is one of the healthiest protein-rich breakfasts. Adai is not only light but also it has dense nutrition. It’s a very old South Indian recipe. This breakfast combines a perfect blend of lentils, rice and spices. Adai dosa is commonly served with chutney and sambhar.

The recipe shared here is the basic adai dosa that I have served with onion and tomato chutney. To make the perfect Adai dosa you need to just have the perfect balance of rice and lentils or dals and you will be able to make this yummy dosa just the way I did. The batter is not fermented that makes this recipe quick and easy. Mostly I soak everything in the night and grind in morning for quick breakfast. This dosa can be made thick or thin crispy or soft whichever way it suits your taste buds.

Ingredients
  

Adai

  • 1 cup rice
  • ½ cup moong dal
  • ½ cup urad dal
  • ½ cup toor dal
  • ½ cup chana dal
  • 4-5 dry red chilli
  • 1 tbsp cumin seeds
  • ginger sliced
  • ¼ tsp asafetida
  • water
  • curry leaves
  • salt accoding to taste

Adai Garnishing

  • onion chopped
  • coriander leaves chopped
  • green chilli chopped
  • red chilli powder

Chutney

  • 1 tsp urad dal
  • 2 dry red chilli
  • 7-8 garlic cloves
  • 1 onion chopped
  • 2 tomato sliced
  • ¼ tsp asafetida
  • curry leaves
  • salt according to taste

Tadka

  • oil
  • 1 tsp mustard seeds
  • curry leaves

Instructions
 

Adai

  • Take a large bowl add in rice, moong dal, urad dal, toor dal, chana dal and wash it with water properly.
  • Add water, red chilli, cumin seeds and curry leaves, let it soak for 7-8 hours or leave overnight
  • After soaking transfer them to a blender, add sliced ginger and grind it to make a coarse paste.
  • Transfer the paste into a bowl, add in asafoetida, salt and mix it well. (add in water to adjust the consistency)
  • In a pan heat some oil, pour batter and spread it with gentle hands.
  • Set flame on medium, sprinkle some sambar masala, chopped onion, coriander leaves, chopped green chilli and some red chilli powder.
  • Add some oil to make it crispy and let it cook.
  • Flip it and let it cook well from both the sides.

Chutney

  • Heat a pan and add in some oil.
  • Add in urad dal and roast it.
  • Next add in red chilli, garlic, curry leaves, onion and roast it well.
  • After roasting add in tomatoes, coconut, asafetida and and salt to taste.
  • Cook till tomatoes are soft.
  • Turn off the heat once cool grind and make a paste of it.

Tadka

  • In a pan heat some oil, add in mustard seed, turn the gas off and add in curry leaves.
  • Put tadka on the chutney and mix well.

Shilpi’s Quick Tricks
Adai
  • If you are using 1 cup rice then use ½ cup dals; so, the ratio should be 1:0.5.
  • Make the batter of flowing consistency.
  • Remove the chilli tops before grinding
  • Spread with light hands.
  • Sambar masala is optional but enhances taste.
Chatni
  • Only grind when the mixture is completely cool.
