Roasted Raw Mango Chutney Recipe | Spicy, tangy, smoky bhune aam ki chutney recipe. Bhune aam ki tasty chutney made with three basic ingredients available at home.

This bhune aam ki chutney is a very old traditional recipe. In earlier times when cooking was mostly done on chulhas (clay stove) my grandma used to make this chutney by just throwing raw mangoes, garlics and chillies right into burnt coal ashes after the cooking was over Coal or ashes used to stay hot for very long time. So the veggies used to char slowly and beautifully gaining nice smoky earthy flavors. But now we don’t have the same chulhas at home . To give it the same smoky flavors I  charred these veggies on gas stove. After charring veggies we pealed them roughly leaving some peel to retain the smoky flavors. To give this chutney the authentic tasty I used st9ne mortar but if you do not have this mortar you can also use an electric grinder.

I love bhune aam ki chutney with added coriander leaves and mint leaves. This recipe is a zero wastage dish. The seed left of mango can be added in dal, that gives dal an amazing taste.

This chutney of roasted raw mango is an amazing side dish. It goes well with dal, rice, chapati and parathas. When you do not want to make any sabzi, just try this recipe once. In summers, I make this recipe very frequently because raw mangoes are easily available.

Bhune Aam Ki Chutney

Ingredients
  

  • 1 Raw Mango
  • 1 Garlic whole
  • 4-5 Green Chilli
  • ½ tsp Black Salt
  • ½ tsp Cumin Powder
  • Salt according to taste
  • Coriander Leaves fine chopped
  • Mint Leaves fine chopped

Instructions
 

  • Place a wire stand on stove and place a raw mango on it.
  • Roast it well while turning it around after a while.
  • When mango is half cooked add garlic and chillies on it.
  • Flip the chillies quickly to avoid the chillies from burring.
  • Char mango, chillies and garlic from all the sides well.
  • Remove the chillies and cook mango and garlic for a while again.
  • Once charred from all the sides remove mango, garlic and let it cool down a little.
  • Once cooled remove the peel from mango, garlic and chillies.
  • Next remove the stem from chills and keep it aside.
  • Now add garlic, chillies and chopped roasted mango.
  • Next add black salt, cumin powder, salt and crush everything coarsely.
  • Next add coriander leaves, mint leaves and crush everything well.
