Homemade instant idli mix powder is made with a mixture of urad dal, rice flour and flatten rice. Idlis made with this idli mix are soft, fluffy and melt in mouth. And the best thing is that we get perfect idlis every time without soaking lentils overnight. Make this powder once and you can store it easily for 3-4 months in fridge.

I love having homemade idli with sambar and coconut chutney. This idli powder premix comes out very handy when you have guests at home or don’t know what else to cook. Here it is very important that every ingredient of this recipe is dry or else the powder will not last for long. Idli Mix

Ingredients
  

  • 1 cup Urad Dal wiped gently with kitchen towel
  • 1 tsp Fenugreek Seeds
  • ½ cup Poha
  • 1 tbsp Sugar
  • 2 cup Rice Flour

Idli from Idli Powder

  • 1 cup Idli Powder
  • ¾ tsp Salt
  • ½ cup Curd
  • 1 cup Water
  • ¾ tsp Eno Fruit Salt or ½ tsp baking soda + ½ tsp lemon juice

Instructions
 

  • Heat a pan on medium high and add urad dal in it.
  • Add fenugreek seeds, mix and roast for 2-3 minutes.
  • After 2-3 minutes turn off the heat add poha in it and roast with heat off.
  • Once the mixture is cool transfer into a grinder add sugar and make a fine powder of it.
  • After grinding sieve the powder then add rice flour and mix well.
  • Store in clean, dry glass bottle in fridge for longer shelf life.

How to make Idli from Idli Powder

  • In a bowl add idli powder, salt, curd and mix well.
  • Now add water slowly to make a smooth batter.
  • Cover and let it rest for 10-15 minutes.
  • After 10 minutes add eno fruit salt and mix well.
  • Fill the batter in greased idly tray & steam for 10-15 minutes.
