Atta Besan Mathri Recipe | Savory Snack Recipe | Mathri recipe with step by step video. Learn how to make crisp atta besan mathri at home.

Mathiya or mathri is a famous savory snack from North India. It is specially made during festivals like Diwali, Holi or just made as savory snack to munch along with evening tea. Matharis come specially handy during long trips when you need something energetic and healthy to munch frequently.

There are many versions of making Mathris. Today I have made mathri from whole wheat flour and gram flour (besan). This fried khasta or crisp mathri recipe is a must try.  After frying, once mathris get cold, pack them in an airtight container and they will be fine for 1-2 months.

Atta Besan Mathri

Ingredients
  

Whole Wheat Flour

  • 1 cup Whole Wheat Flour
  • Salt
  • 2 tbsp Oil

Gram Flour Dough

  • 1 cup Gram Flour
  • ½ tsp Salt
  • 1 tsp Dry Mango Powder
  • ½ tsp Turmeric Powder
  • 1 tsp Carom Seeds crushed between palms
  • 1 tsp Chili Flakes
  • 1 tbsp Dry Fenugreek Seeds
  • 1 tbsp Oil
  • Water

Instructions
 

Wheat Dough

  • In a bowl add whole wheat flour, salt, oil and mix till oil gets absorbed.
  • Now add little water at a time and make a hard dough.
  • Next transfer into a bowl and keep it covered.

Gram Flour Dough

  • In a bowl add all the ingredients and mix well till oil is absorbed.
  • Now add little water at a time and make a hard dough.
  • Next transfer into a bowl and keep it covered for 20 minutes.

Mathri

  • After 20 minutes divide the wheat flour dough into 2 parts.
  • After 20 minutes knead and divide the gram flour dough into 2 parts.
  • Take some oil and knead the gram flour dough again.
  • Next roll the whole flour into a thick circle.
  • Now take the gram flour dough for the same thickness.
  • Take the wheat flour roti apply water on the edges and stick the gram flour roti on it.
  • Roll the rotis together again gently and then roll it from side to make a tight roll.
  • Gently extend the log by rolling next cut the log into 1/2 inch thick pieces.
  • Gently press the dough pieces and roll it a bit.
  • For frying heat oil on low flame, cook for a while and then flip over.
  • Once cooked increase the heat to give some colour.
  • Mathri is ready. Once cool down pack these mathris in air tight container.
