Gobi Aloo Sabji Recipe | Gobhi Aloo ki Sabji | This aloo gobi recipe (or potato cauliflower curry) is one of the most common Indian curry recipes.

There are several ways to make this curry. Today I am posting this dhaba style aloo gobi recipe which is little spicier and richer in taste. In this gobi aloo recipe, aloo and gobi (cauliflower potatoes) are cooked in the gravy flavored with ginger, garlic and lots of other Indian spices. This aloo gobi curry tastes wonderful with roti, paratha or rice.

Whenever I choose cauliflower at store, I look for creamy white compact florets with fresh, thick, crispy green leaves and avoid dull colors and spots. Size is not related to quality, I pick up whichever seems fresh. Coming to the recipe, this is really an easy aloo gobi recipe. I sautéed gobi, aloo in little oil till they get nicely roasted. I prefer to cut cauliflower in large pieces and potatoes in smaller pieces so that they get cooked at same time. Next, I pressure cooked onions, garlic, ginger and tomatoes till they become soft. Sautéed them till they leave oil and added masala, aloo, gobi and dry fenugreek leaves. Added water and cooked on simmer till veggies are soft and fully cooked. And yes, don’t forget to garnish with some fresh coriander leaves.

Ingredients
  

  • 1 cup Cauliflower Florets chopped
  • 2 Potato chopped
  • 1 tsp Salt
  • 2 Tomatoes
  • 1 inch Ginger
  • 2 Small Cardamom
  • 1 Big Cardamom
  • 2 Cloves
  • 4-5 Black Pepper Corn
  • Oil
  • 2 Bay Leaf
  • 1 tsp Cumin Seeds
  • 8-10 Garlic Cloves fine chopped
  • 2 Onion fine chopped
  • Salt
  • ½ tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 tbsp Dry Fenugreek Leaves crushed
  • Coriander Leaves fine chopped
  • 2 tbsp Coriander Powder
  • 2 cups Water
  • ½ tsp Garam Masala Powder
  • Coriander Leaves fine chopped

Instructions
 

  • In a pan boil water, then add cauliflower florets, potato, salt and let them boiled till half cooked.
  • Once boiled take them out and let drain.
  • In a grinder add tomato, ginger, small cardamom, big cardamom, cloves, black pepper corn and grind to make a paste.
  • In a pan add oil and then add potato, fry lightly and keep them aside.
  • In the same pan add oil again then add all the dry garam masala and roast a bit.
  • Next add onion, salt, mix and cook till golden brown.
  • Now add all the dry masala powders and roast till masala gets cooked.
  • Next tomato puree mix and cook till masala releases oil.
  • After that add coriander powder, fried cauliflower, potato, mix and cook for 2-3 minutes.
  • Next add water mix and bring it to boil.
  • Cover and cook for 10 minutes on low flame, then add garam masala powder, coriander leaves and mix well
