Dahi Phulki Recipe | How to Make Dahi Fulki | Dahi phulki or dahi fulki is basically gram flour dumplings dipped in yogurt. Cold, soft, juicy and delicious dahi phulki is a very unique snack from north India. It is specially famous during summer season but can be made anytime. Also it is very popular dish during Ramadan and Eid festivals.

Dahi fulki literally means light dumplings soaked in yogurt. Since it is made with besan or gram flour so no soaking and grinding is required. Here I had kept the gram flour batter to rest for at least 10 minutes that gives us nice and smooth batter. To check if batter is ready for frying drop small size dumpling in water and if it floats, it is ready. Curd should be thin so that fulki can absorb the juice and become soft. I have made these phulki in very basic style but you can also add chopped onion to give it an edge. Little sugar is added in curd to balance out the sour taste and make it even more delicious. I have diluted curd with water but people also like to dilute it with half milk and half water mixture. you can try it either ways.

  • 1 cup Gram Flour
  • Green Chilli fine chopped
  • ½ tsp Turmeric Powder
  • ¼ cup Coriander Leaves fine chopped
  • Salt
  • 1 pinch Baking Soda
  • Water
  • 500 gm Curd
  • 1 tsp Chilli Flakes
  • ½ tsp Black Salt
  • 1 tsp Chilli Flakes
  • ½ tsp Black Salt
  • 1 tsp Sugar
  • 1 tsp Cumin Powder
  • Garlic Clove grated, optional
  • Salt
  • Water
  • 1 tbsp Oil
  • Asafoetida
  • 1 tsp Cumin Seeds
  • 2 Dry Red Chillies
  • Curry Leaves


  • In a bowl add gram flour, green chillies, turmeric powder, coriander leaves, salt and mix well.
  • Slowly add little water at a time and make a pakoda consistency batter.
  • Once batter is ready let it rest for 10 minutes.
  • After 10 minutes whip batter again for 2-3 minutes.
  • To check if batter is ready then in a small bowl add water put a small drop of batter in it if it floats then your batter is ready.
  • Now add baking soda and mix well again.
  • Now in a pan heat oil and drop phulkis in it.
  • Cook the phulki will crisp from all sides.
  • In a bowl add curd and whisk till smooth.
  • Now add chilli flakes, black salt, sugar, cumin powder, garlic, salt and mix well.
  • Now add water and make the curd thin.
  • Now add the hot phulki in curd mix and let it soak for 1-2 hours.
  • Now to make tadka in a pan add oil, next add asafoetida, cumin seeds and turn off the heat.
  • Next add dry red chillies, mix and then add curry leaves.
