Aloo Besan Sev Recipe | How to Make Aloo Sev at Home

Aloo sev is a famous Indian snack that is made from gram flour (besan) paste along with grated boiled potatoes, turmeric and a lots of spicy Indian seasoning which is then deep-fried in oil to till crispy and crunchy. The size and thickness vary according to the taste and preferences. I often make aloo (potato) sev at home as it tastes awesome and ensures that it is preservatives free.

This recipe is different from aloo bhujia recipe and is very easy to make as it doesn’t require much of preparation time. I have also posted other crispy snack recipes like Macaroni Crispies, Soya Crispies, Masala Peanuts and many more. Do try them as well.

Aloo Besan Sev Recipe

Ingredients
  

Potato

  • 300 gm Potato boiled & peeled

Dough

  • 1.5 cup Besan
  • ¼ tsp Turmeric Powder
  • ¼ tsp Red Chilli Powder
  • ¼ tsp Garam Masala Powder
  • 1 tsp Dry Mango Powder
  • ¼ tsp Black Salt
  • ½ tsp Chaat Masala
  • Asafoetida
  • Salt

Instructions
 

Potato

  • Wash and boil the potatoes.
  • Remove the excess water from it and peel the potatoes.
  • With the help of a grater grate all the potatoes into a bowl.

Dough

  • In the same mixing bowl add besan, turmeric powder, red chilli powder, garam masala, dry mango powder, black salt, chaat masala, asafoetida, salt and mix it well and make a smooth dough without using water.
  • Grease hands with oil and apply it gently on the dough.
  • Cover and let it rest for 10-15 minutes.

Aloo Besan Sev

  • Grease sev machine with some oil, now put some dough into the machine.
  • Heat oil on medium high heat and check by putting a little dough in it and if you see bubbles means it is ready.
  • Extrude sev in circular direction, once firm flip it and cook from the other side too.
  • Now remove it once cooked and let it cool down completely.
  • Once cold crush them and store it in an air tight container.

Shilpi’s Quick Tricks
Potato
  • Don’t mash the potatoes too much or else the dough won’t come fine.
Dough
  • Don’t use water to knead the dough.
  • If the dough is sticky then use a little more gram flour.
