  • 2 tablespoons oil
  • 3 cloves garlic, finely chopped
  • 1 tablespoon ginger, finely chopped
  • 2 green chilies, chopped
  • 1/2 cup chopped green onions (white part)
  • 1/2 cup chopped onions
  • 2 tablespoons soy sauce
  • 1 tablespoon green chili sauce
  • 1 tablespoon red chili sauce
  • Salt to taste
  • 1 teaspoon sugar
  • 1/4 cup chopped green onions (for garnish)

For Veg Gravy:

  • 2 tablespoons oil
  • 3 cloves garlic, chopped
  • 1 tablespoon ginger, chopped
  • 2 green chilies, chopped
  • 1 cup chopped onions
  • 1 cup diced carrots
  • 1 cup chopped cauliflower
  • 1 cup chopped beans
  • 1 cup sliced mushrooms
  • 1 cup paneer (cubed) or tofu
  • 2 tablespoons dark soy sauce
  • 1 tablespoon red chili sauce
  • 1 tablespoon green chili sauce
  • 1/2 teaspoon black pepper powder
  • Salt to taste
  • 1 teaspoon vinegar
  • 1 teaspoon sugar
  • 2 tablespoons cornflour mixed with ½ cup water (cornflour slurry)
  • 1 cup water

Instructions:

For Fried Rice:

  1. Heat oil in a wok or large pan. Add chopped garlic, ginger, and green chilies. Sauté until fragrant.
  2. Add chopped onions and cook for 1 minute.
  3. Add diced carrots, beans, and bell peppers. Sauté for 1-2 minutes.
  4. Stir in chopped cabbage and mix well. Cook for an additional minute.
  5. Add soy sauce, green chili sauce, and red chili sauce. Mix well.
  6. Add the cooked rice to the pan. Stir to combine, making sure the rice is well-coated with the sauces.
  7. Season with salt and sugar. Mix well.
  8. Garnish with chopped green onions and serve hot.

For Veg Gravy:

  1. Heat oil in a pan. Add chopped garlic, ginger, and green chilies. Sauté until the garlic is golden brown.
  2. Add chopped onions and cook until slightly softened (about 1 minute).
  3. Add diced carrots, cauliflower, beans, and mushrooms. Sauté for 1-2 minutes.
  4. Stir in cubed paneer (or tofu) and mix well.
  5. Add dark soy sauce, red chili sauce, and green chili sauce. Mix well.
  6. Pour in the water and bring to a boil. Cook until the vegetables are tender.
  7. Add the cornflour slurry gradually while stirring to thicken the gravy.
  8. Season with black pepper powder, salt, vinegar, and sugar. Mix well.
  9. Cook for an additional 2-3 minutes until the gravy reaches your desired consistency. Adjust seasoning as needed.
  10. Serve hot over the fried rice or alongside.
