Ingredients
- 10 Almonds soaked for 5 hours
- 2 Walnuts soaked for 5 hours
- 1 Tablespoon Poppy Seeds soaked for 4-5 hours
- 2 Cardamom Pods
- A few strands of Saffron
- ½ Cup Fox Nuts makhana, chopped if desired
- 1 Tablespoon Ghee clarified butter
- ⅓ Cup Broken Wheat dalia
- 3 Cups Milk preferably fat-free
- 2-3 Tablespoons Mishri (rock cand
Instructions
- Prepare the Nut and Seed Paste:
- Drain the soaked almonds and walnuts. If you prefer, you can peel off the almond skins, though it's optional.
- In a blender, combine the almonds, walnuts, and soaked poppy seeds. Blend to a smooth, fine paste.
- Prepare Fox Nuts:
- Heat a pan over medium heat. Add the chopped fox nuts (makhana) and dry roast them until they become crispy. You can roast them with a little ghee if preferred. Set aside.
- Cook the Broken Wheat:
- In the same pan, add 1 tablespoon of ghee.
- Add ⅓ cup of broken wheat (dalia) to the ghee and roast it on a low flame until it turns golden brown and emits a nutty aroma.
- Combine Ingredients:
- Carefully add hot water to the roasted broken wheat, enough to cover it. Stir and let it cook for 2-3 minutes until the water is absorbed and the wheat is partially cooked.
- Add 3 cups of milk to the pan. Increase the heat and bring the mixture to a boil.
- Add the Paste and Sweetener:
- Once the milk starts boiling, add the prepared nut and seed paste.
- Stir well to combine. Then add the mishri (rock candy) or jaggery according to your taste. Mix until the sweetener is completely dissolved.
- Flavor and Finish:
- Crush the cardamom pods and add them to the mixture.
- Add a few saffron strands for added flavor and color.
- Reduce the heat and let the kheer simmer for 5-7 minutes, stirring occasionally, until it thickens to your desired consistency. The kheer will continue to thicken as it cools.
