  • 2 ripe starfruits kamrakh, washed and sliced
  • 1 tablespoon oil
  • 1 teaspoon asafoetida hing
  • 1 teaspoon fennel seeds
  • 1 teaspoon cumin seeds
  • 1 medium onion finely chopped
  • 1/2 teaspoon turmeric powder
  • 1-2 green chilies chopped (mildly spicy)
  • Salt to taste
  • Optional: 1-2 teaspoons sugar or jaggery for sweetness
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon coriander powder

  • 1 ripe starfruit kamrakh, chopped
  • 1 cup fresh coriander leaves
  • 2-3 cloves garlic
  • 2 green chilies
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon black salt kala namak
  • Salt to taste
  • Water as needed

  • Prepare the Starfruit: Wash the starfruits thoroughly. Trim the edges and slice them into star-shaped pieces. Remove the seeds.
  • Sauté Spices: Heat oil in a pan. Add asafoetida, fennel seeds, and cumin seeds. Sauté for a minute until fragrant.
  • Cook Onions: Add finely chopped onions to the pan. Sauté until they turn golden brown.
  • Add Starfruit: Spread the sautéed onions evenly in the pan. Add starfruit slices.
  • Season and Cook: Add turmeric powder, chopped green chilies, and salt. Mix well. Cover and cook on low heat for 3-4 minutes, or until the starfruit is tender.
  • Optional Sweetening: For a sweeter taste, add sugar or jaggery. Mix well.
  • Finish: Sprinkle garam masala and coriander powder if desired. Mix and cook for another minute. Serve hot with parathas, puris, or rice.

  • Prepare Ingredients: Wash and chop the starfruit. Wash fresh coriander leaves.
  • Blend Chutney: In a blender, combine chopped starfruit, coriander leaves, garlic, green chilies, roasted cumin powder, black salt, and regular salt. Add a little water to aid blending.
  • Blend: Blend until smooth. Adjust seasoning if necessary.
  • Serve: Serve the chutney with snacks, or as a side with dal and rice.

Kamrakh Variants: You can use either green or yellow starfruit. Both work well in these recipes.
