- 2 ripe starfruits kamrakh, washed and sliced
- 1 tablespoon oil
- 1 teaspoon asafoetida hing
- 1 teaspoon fennel seeds
- 1 teaspoon cumin seeds
- 1 medium onion finely chopped
- 1/2 teaspoon turmeric powder
- 1-2 green chilies chopped (mildly spicy)
- Salt to taste
- Optional: 1-2 teaspoons sugar or jaggery for sweetness
- 1/2 teaspoon garam masala
- 1/2 teaspoon coriander powder

- 1 ripe starfruit kamrakh, chopped
- 1 cup fresh coriander leaves
- 2-3 cloves garlic
- 2 green chilies
- 1/2 teaspoon roasted cumin powder
- 1/2 teaspoon black salt kala namak
- Salt to taste
- Water as needed

- Prepare the Starfruit: Wash the starfruits thoroughly. Trim the edges and slice them into star-shaped pieces. Remove the seeds.
- Sauté Spices: Heat oil in a pan. Add asafoetida, fennel seeds, and cumin seeds. Sauté for a minute until fragrant.
- Cook Onions: Add finely chopped onions to the pan. Sauté until they turn golden brown.
- Add Starfruit: Spread the sautéed onions evenly in the pan. Add starfruit slices.
- Season and Cook: Add turmeric powder, chopped green chilies, and salt. Mix well. Cover and cook on low heat for 3-4 minutes, or until the starfruit is tender.
- Optional Sweetening: For a sweeter taste, add sugar or jaggery. Mix well.
- Finish: Sprinkle garam masala and coriander powder if desired. Mix and cook for another minute. Serve hot with parathas, puris, or rice.

- Blend Chutney: In a blender, combine chopped starfruit, coriander leaves, garlic, green chilies, roasted cumin powder, black salt, and regular salt. Add a little water to aid blending.
- Blend: Blend until smooth. Adjust seasoning if necessary.
- Serve: Serve the chutney with snacks, or as a side with dal and rice.
