Murmura / Puffed Rice Idli | How to make instant soft idli at home

Ingredients
  

  • For the Idli:
  • 2 cups murmura puffed rice
  • ½ cup water for soaking
  • 1 cup rava semolina
  • 1 cup plain yogurt dahi
  • ½ teaspoon salt
  • ½ teaspoon eno fruit salt or baking soda optional
  • 1 tablespoon water for eno
  • For the Chutney:
  • 1 teaspoon oil
  • cup raw peanuts
  • 8-10 curry leaves
  • 1- inch piece ginger chopped
  • 2 green chilies chopped
  • 1 tablespoon roasted chana dal optional
  • ¼ cup fresh grated coconut or frozen/dried coconut
  • A handful of coriander leaves chopped
  • Salt to taste
  • Water as needed for blending

Instructions
 

  • Prepare the Murmura:
  • Rinse the murmura under water to soften and clean it. Drain and transfer it to a blender.
  • Make the Batter:
  • Add ½ cup water to the murmura in the blender and blend to a smooth paste.
  • Transfer the paste to a mixing bowl.
  • Add 1 cup rava, ½ teaspoon salt, and 1 cup yogurt. Mix well until smooth.
  • Cover and let the batter rest for 15 minutes.
  • Prepare the Chutney:
  • Heat 1 teaspoon oil in a pan over medium heat.
  • Add the raw peanuts and roast them lightly.
  • Add curry leaves, chopped ginger, and green chilies. Roast for a minute.
  • Add roasted chana dal and grated coconut. Turn off the heat and mix well.
  • Let the mixture cool down, then blend it with salt and a little water to a smooth chutney consistency.
  • Prepare the Idli:
  • Grease small bowls or molds with oil.
  • Stir the idli batter and add ½ teaspoon eno fruit salt or baking soda if using. Mix well and add 1 tablespoon water if the batter is too thick.
  • Pour the batter into the prepared bowls, filling them halfway.
  • Steam in a preheated steamer for about 15 minutes. Check doneness by inserting a toothpick; it should come out clean.

Notes

Allow the idlis to cool slightly before removing them from the molds.
Serve warm with the freshly prepared chutney.
