Traditionally prepared in a wok-like pan called a "kadai," this recipe recreates the authentic taste of restaurant-style Kadai Paneer, similar to the famed dishes from Patiala Dhaba in Bangalore. With a blend of aromatic spices, a creamy tomato-based gravy, and succulent paneer cubes, this dish is perfect for special occasions or a hearty meal. Ingredients
Ingredients For the Basic Gravy:
- 2 kg onions peeled and chopped
- 1 kg tomatoes chopped
- 2 tbsp turmeric powder
- 4 tbsp coriander powder
- 2 tbsp garam masala
- 2 tbsp red chili powder or Kashmiri red chili powder for less heat
- Salt to taste
- 3-4 tbsp cooking oil
For the Nut Paste:
- 1/4 cup almonds
- 1/4 cup cashews
- 2 tbsp melon seeds or substitute with more almonds or cashews
- Water as needed
For the Kadai Paneer:
- 250-300 grams paneer cut into large cubes
- 1 large onion cut into large chunks
- 1 large bell pepper capsicum, cut into large chunks
- 2 tbsp Kitchen King Masala
- 1 tbsp Chole Masala
- 1 tbsp kasuri methi dried fenugreek leaves
- 1 tsp red chili powder
- Fresh coriander leaves chopped (for garnish)
- 1 tbsp ghee clarified butter, optional for garnish
Instructions
Prepare the Basic Gravy:
- Boil the chopped onions in water until soft. Drain and cool.
- Blend the boiled onions to a smooth paste.
- Prepare tomato puree by blending the chopped tomatoes.
- Heat oil in a large pan, add tomato puree, turmeric powder, coriander powder, garam masala, red chili powder, and salt.
- Cook until the oil separates from the mixture.
- Mix in the onion paste and cook for a few more minutes until well combined.
Prepare the Nut Paste:
- Blend almonds, cashews, and melon seeds with a little water to form a smooth paste.
- Stir this paste into the basic gravy.
- Add water as needed to reach your desired consistency.
- Simmer to cook out the raw flavors, and set aside.
Cook the Kadai Paneer:
- Heat oil in a pan over high heat.
- Add the chunks of onion and bell pepper, and sauté until slightly charred.
- Add the basic gravy to the pan.
- Stir in paneer cubes and cook briefly until heated through.
- Season with Kitchen King Masala, Chole Masala, kasuri methi, red chili powder, and salt.
- Garnish with fresh coriander leaves and a spoonful of ghee, if desired.
