Moringa Flower Pakode and Cheela Recipe

Moringa, also known as drumstick or sehjan, is a highly nutritious plant known for its health benefits. In this recipe, we’ll be using moringa flowers and leaves to make two delightful dishes: crispy Pakode (fritters) and savory Cheela (pancake). The flowers and tender leavesof moringa or sehjan are coated in a spiced gram flour batter to make crispy fritters and a thick batter for a flavorful pancake. This recipe is not only delicious but also a great way to incorporate this superfood into your diet.

Ingredients
  

For Moringa ke Pakode:

  • Moringa flowers: 1 cup
  • Tender moringa leaves: 1 cup
  • Gram flour besan: 1/2 cup
  • Rice flour: 1/4 cup
  • Hing asafoetida: A pinch
  • Carom seeds ajwain: 1/2 teaspoon
  • Green chilies: 2-3 finely chopped
  • Onion: 1 small finely chopped
  • Fresh coriander leaves: 1/4 cup chopped
  • Cumin seeds: 1/2 teaspoon
  • Turmeric powder: 1/4 teaspoon
  • Amchur dried mango powder: 1/2 teaspoon
  • Salt: To taste
  • Oil: For frying

For Moringa flower Cheela:

  • Moringa flowers and leaves mixture: From above
  • Gram flour besan: 1/2 cup

Instructions
 

Prepare the Moring flowers:

  • Wash the moringa flowers and tender leaves thoroughly.
  • Separate the flowers from the stems and discard the stems.
  • Check the flowers and leaves for any insects or dirt.

Prepare the sehjan ke Pakode:

  • In a large bowl, combine the gram flour, rice flour, hing, carom seeds, chopped green chilies, finely chopped onion, fresh coriander, cumin seeds, turmeric powder, amchur, and salt.
  • Add the moringa flowers and leaves to the bowl and mix well.
  • Gradually add water to form a thick batter, similar to pakora batter.
  • Heat oil in a pan over medium heat.
  • Drop spoonfuls of the batter into the hot oil, frying a few at a time.
  • Fry until golden brown and crispy.
  • Remove with a slotted spoon and drain on paper towels.

Prepare the Cheela:

  • Heat a non-stick pan over medium heat.
  • Pour a ladleful of the batter onto the pan and spread it into a thick pancake.
  • Drizzle a little oil around the edges and on top.
  • Cook until the bottom is golden brown and crisp.
  • Flip and cook the other side until golden brown.
  • Remove from the pan and keep warm.

Serve the hot pakode and cheela with your favorite chutney or yogurt.
