
Badam Puri | How to make Crispy Juicy Badam Puri at home
Badam Puri, also known as crispy sweet Mathri, is a delightful treat from Karnataka and South India. These crunchy, sweet pastries are made with wheat flour and almonds, making them a rich and flavorful snack. They are ideal for long-term storage and can be enjoyed anytime you have a sweet craving. With a crispy texture and a touch of ghee, these puris are perfect for festive occasions or as a special treat.
Ingredients
- Almonds: 10-15 soaked overnight or microwaved for 30 seconds
- Wheat Flour: 1.5 cups can substitute half with maida for a lighter texture
- Ghee Clarified Butter: 2 tablespoons
- Salt: 1/4 teaspoon
- Water: As needed to make the dough
For sugar syrup
- Sugar: 1 cup
- Water: 1 cup
- Cardamom Pods: 2
- Saffron: A pinch
For Garnishing
- Chopped Almonds
- Chopped Pistachios
Instructions
Prepare the Almonds:
- Soak 10-15 almonds overnight. If short on time, soak them for 5 minutes and microwave for 30 seconds.
- Peel the almonds and grind them with a little water to make a smooth paste.
Make the Dough:
- In a large bowl, combine 1.5 cups of wheat flour with 1/4 teaspoon of salt.
- Add 2 tablespoons of ghee and mix well.
- Incorporate the almond paste into the flour mixture.
- Gradually add water and knead to form a smooth, soft dough, similar to paratha dough.
- Cover the dough and let it rest for 10 minutes.
Prepare the Sugar Syrup:
- In a saucepan, combine 1 cup of sugar with 1 cup of water. Heat over medium-high flame until the sugar dissolves.
- Crush 2 cardamom pods and a pinch of saffron, then add to the syrup.
- Cook the syrup for 10-12 minutes until slightly sticky, but not too thick.
Shape the Badam Puris:
- Divide the dough into two parts.
- Roll each part into long logs for easy cutting.
- Cut the logs into even pieces and shape them into balls.
- Roll each ball into a small circle. Fold in half, then fold again, pinching the edges to create layered folds.
- Roll out gently to maintain the layers.
- Fry the Puris:
- Heat oil in a large pan over medium heat.
- Fry the puris until golden brown and crispy, turning as needed.
- Remove from oil and drain on paper towels.
Dip in Syrup:
- Briefly dip the warm puris into the cooled sugar syrup for about one minute.
- Remove and let excess syrup drain off.
Garnish and Serve:
- Garnish with finely chopped almonds and pistachios.
- Allow the puris to cool completely before storing.
