Ingredients
- 2 dried coconuts grated
- 1/2 liter high-fat milk
- 2 to 1.5 cups sugar adjust to taste
- 1 tablespoon ghee clarified butter
- 20-22 almonds
- 10-12 cashews
- 2 tablespoons pumpkin seeds
- 2 tablespoons watermelon seeds
- 1 tablespoon poppy seeds khus-khus
- 1/2 teaspoon crushed cardamom optional
Instructions
Prepare the Coconut:
- Clean and peel the dried coconuts.
- Grate the coconuts using a medium grater. Set aside.
Roast Nuts and Seeds:
- Dry roast the pumpkin seeds, poppy seeds and watermelon seeds in a pan on low heat until they start to pop. Remove and set aside.
- Add 1 tablespoon of ghee to the same pan.
- Roast the almonds until slightly golden, then add cashews. Roast until both nuts are crisp. Remove from the pan.
Cook Coconut Mixture:
- In the same pan, add the grated coconut and roast on low flame for 5-6 minutes until fragrant.
- Pour in the milk and add sugar (about half the quantity of grated coconut). Stir well.
- Increase the flame and cook the mixture, stirring continuously until the milk is absorbed and the mixture thickens.
Add Flavor and Mix:
- Lower the flame and add the roasted seeds and poppy seeds.
- Stir in the crushed cardamom, if using.
- Cook until the mixture becomes dry and starts to pull away from the sides of the pan.
Shape the Ladoo:
- Allow the mixture to cool slightly.
- Grease your hands with a little ghee and shape the mixture into round balls (laddus).
- You can also make barfi or use molds for different shapes.
Cool and Store:
- Let the laddus cool completely.
- Store in an airtight container. They remain fresh for 3-4 days.
