For paratha wrap use any veggies of your choice or whatever is available at home.
Ingredients
Vegetables:
- 1 medium carrot finely chopped
- 1 bell pepper any color, finely chopped
- 1/2 cup frozen corn thawed
- 1 tomato finely chopped (seeds removed)
- Paneer or alternatives:
- 1/2 cup paneer diced into small cubes (or substitute with cauliflower, cabbage, or beans)
Moong Dal Mixture:
- 1/2 cup moong dal soaked for 4 hours
- 1 small piece of ginger
- 1/2 teaspoon cumin seeds
- Salt to taste
- For Toasting:
- 4 slices of bread
- 1-2 tablespoons ghee or oil
- 1 tablespoon sesame seeds optional
- Few curry leaves optional
- 1/2 teaspoon red chili flakes optional
- Instructions:
- For Paratha Wrap
For Dough:
- 1 cup whole wheat flour
- 1/4 teaspoon salt
- Water as needed
For Filling:
- 1/2 cup paneer grated
- 1/2 cup tomato finely chopped
- 1/2 cup corn kernels
- 1/2 cup mixed vegetables carrot, bell pepper, etc., finely chopped
- 2 tablespoons pizza sauce or tomato ketchup, mayonnaise, or green chutney
- Salt to taste
- 1/2 teaspoon chili flakes optional
- 1 tablespoon coriander leaves finely chopped
- 1/4 cup grated cheese optional
- Ghee or oil for cooking
Instructions
- Finely chop the carrot, bell pepper, and tomato. Dice the paneer and thaw the corn.
Make Moong Dal Mixture:
- Drain the soaked moong dal. In a blender, combine the dal, ginger, cumin seeds, and a little water. Blend until smooth, similar to dosa batter consistency.
Mix Ingredients:
- Add half of the chopped vegetables (carrot, bell pepper, tomato), corn, and a bit of chopped coriander into the moong dal mixture. Season with salt and mix well.
- Heat a pan and add a little ghee or oil. Sprinkle sesame seeds and curry leaves if using.
- Spread the moong dal mixture on one side of each bread slice. Place the bread mixture side down on the hot pan.
- Cook on low heat until the bread is crispy and golden brown on both sides, pressing lightly to ensure even cooking.
- For Making Paratha wrap:
Prepare Dough:
- In a bowl, mix the flour and salt. Gradually add water and knead to make a soft dough. Cover and set aside.
Prepare Filling:
- In a bowl, combine grated paneer, chopped tomato, corn, mixed vegetables, and any optional ingredients. Season with salt, chili flakes, and coriander leaves. Mix well.
- Divide the dough into small balls. Roll out each ball into a thin circle.
- Spread a thin layer of pizza sauce on one side of the paratha. Add a portion of the filling mixture and sprinkle with cheese if desired.
Fold and Cook:
- Fold the paratha in half to cover the filling. Heat a pan and cook the paratha on medium heat with a little ghee or oil, pressing lightly until golden brown on both sides.
