Ingredients
For the Paratha:
- 1 cup whole wheat flour
- 1/2 teaspoon salt
- 2 tablespoons ghee or oil for cooking
For the Besan Filling:
- 1/2 cup besan gram flour
- 1/4 teaspoon red chili flakes
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon salt adjust to taste
- 1/4 teaspoon amchur dried mango powder
- 1/4 cup finely chopped onions
- 1/4 cup finely chopped tomatoes
- 1-2 tablespoons water for mixing
Additional Toppings:
- Ketchup
- Mayonnaise
- Grated cheese
- Salad leaves or spinach
- Chopped fresh coriander optional

Prepare the Paratha Dough:
- In a mixing bowl, combine the whole wheat flour and salt.
- Gradually add water and knead to form a soft dough.
- Cover and let it rest for 15-20 minutes.
Make the Besan Filling:
- In a bowl, mix the besan with red chili flakes, coriander powder, turmeric powder, salt, and amchur.
- Add the chopped onions and tomatoes to the mixture.
- Gradually add water and mix to form a thick paste. Adjust the consistency as needed; it should be thick but spreadable.
Prepare the Paratha:
- Divide the dough into equal-sized balls.
- Roll each ball into a square shape on a floured surface.
- Heat a skillet or tawa over medium heat and cook the rolled-out dough until lightly browned on both sides, adding a bit of ghee or oil as needed.
- Spread a thin layer of the besan mixture evenly over one side of the cooked paratha.
- Put it besan side down on heated pan. Sprinkle some oil and cook the paratha well.
- once cooked properly, cool the paratha little bit.
- Add any additional toppings like grated cheese, salad leaves, or spinach.
- Fold the paratha into a square or wrap it into a roll, securing the filling inside.
- Cut the Frankie into manageable pieces if desired.
- Serve warm with ketchup, mayonnaise, or any sauce of your choice.
