Ingredients
- Popcorn Kernels: 1/2 cup
- Oil: 2 tablespoons
- Butter: 2 tablespoons
- Salt: 1 teaspoon
- Granulated Sugar: 1/2 cup
- Water: 1 tablespoon
- Baking Soda: 1/8 teaspoon
Instructions
Pop the Corn:
- Heat 2 tablespoons of oil in a large pan over medium heat.
- Add 2 tablespoons of butter and let it melt.
- Once the butter is melted, add 1/2 cup of popcorn kernels to the pan.
- Sprinkle 1 teaspoon of salt over the kernels.
- Cover the pan and let the kernels pop. Shake the pan occasionally to ensure even popping.
- When the popping slows down, remove the pan from heat and let the popcorn sit covered for a few minutes to allow any remaining kernels to pop.
- Transfer the popped popcorn to a large bowl and set aside to cool.
Prepare the Caramel:
- In a non-stick pan, add 1/2 cup granulated sugar and 1 tablespoon water.
- Heat over medium heat, stirring occasionally until the sugar completely melts and turns a golden-brown color. Be careful not to burn the sugar.
- Once the sugar is melted and has a golden-brown color, remove the pan from heat.
- Quickly stir in 2 tablespoons of butter until fully combined.
- Add 1/8 teaspoon of baking soda to the caramel mixture. The mixture will bubble up, so stir quickly.
- Pour the hot caramel over the popped popcorn.
- Use a spatula or wooden spoon to mix and coat the popcorn evenly with the caramel.
- Spread the caramel-coated popcorn onto a parchment-lined baking sheet.
- Let the popcorn cool completely. As it cools, it will harden and become crispy.
- Once the caramel popcorn has cooled and hardened, break it into pieces and enjoy!
