Ingredients
For the Spice Mix:
- 1/4 cup peanuts
- 10-12 dried red chilies
- 1 tablespoon garlic cloves
- 1 teaspoon sesame seeds
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- A few curry leaves
- 1 tablespoon desiccated coconut
- A handful of fresh coriander leaves
For the Balls:
- 2 pav or 3 slices of bread
- 4 boiled potatoes
- 2-3 tablespoons besan gram flour
- Salt to taste
- Oil for frying
- Chaat masala optional, for sprinkling
- 5-6 green chilies slitted
Instructions
Prepare the Spice Mix:
- In a pan, dry roast the peanuts, dried red chilies, garlic cloves, sesame seeds, cumin seeds, and coriander seeds on low heat until they release a pleasant aroma and slightly change color.
- Add curry leaves and desiccated coconut to the pan and continue roasting until the coconut turns golden.
- Turn off the heat and stir in fresh coriander leaves. Let the mixture cool.
- Transfer the cooled mixture to a grinder and pulse to a coarse consistency. Set aside.
Prepare the Potato Mixture:
- Break the pav (or bread slices) into small pieces and grind them to form coarse crumbs.
- Mash the boiled potatoes lightly, leaving some small chunks for texture.
- In a mixing bowl, combine the mashed potatoes, ground spice mix, bread crumbs, and salt. Add 2-3 tablespoons of besan for binding. Adjust the amount of besan as needed to ensure the mixture holds together well.
- Grease your hands with a little oil or butter. Take small portions of the mixture and roll them into bite-sized balls.
- You should be able to make around 40 balls from this mixture.
- Heat oil in a pan over medium-high heat.
- Fry the balls in batches until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
- In the same hot oil, fry the slit green chilies until they are crisp. Remove and set aside.
- Sprinkle chaat masala over the hot vada pav balls, if desired.
- Serve with fried green chilies and toothpicks for easy picking.
- Enjoy your crispy, flavorful Vada Pav Balls as a delightful party snack or a savory treat with your evening tea!
