Dal Fara is very healthy and nutritious as the dal is rich in protein and the cooking technique used is either steaming or boiling. We make this for lunch or dinner and serve it with green coriander chutney. But today I am going to give fara a very special twist which I am sure you will love.
Dal Fara is a delicious and crispy snack popular in Bihar, India. This dish features a filling made from mung dal, flavored with spices and herbs, all enveloped in a soft wheat flour dough. The unique combination of textures—the crispiness of the outer layer and the flavorful, soft filling—makes Dal Fara a perfect tea-time snack or appetizer. Ingredients
For the Filling:
- ½ cup mung dal soaked for 4 hours
- 7-8 garlic cloves
- 1- inch piece of ginger
- 1 tsp coriander seeds
- Salt to taste
- ¼ tsp cumin seeds
- ¼ tsp fennel seeds saunf
- 1 finely chopped green chili
- Fresh coriander leaves chopped
- Optional: ¼ cup finely chopped onion
For the Dough:
- 1½ cups wheat flour
- ½ tsp salt
- 1 tsp oil
- Water as needed
For the Batter:
- ½ cup wheat flour
- 1-2 tbsp chili flakes
- Fresh coriander leaves chopped
- Salt to taste
- Water to achieve a thin consistency
Instructions
Prepare the Filling:
- Drain the soaked mung dal and place it in a blender. Add garlic, ginger, coriander seeds, and a little water (if necessary) to grind into a thick paste.
- Transfer the paste to a bowl and mix in salt, cumin seeds, fennel seeds, green chili, coriander leaves, and onion (if using). Set aside.
Make the Dough:
- In a mixing bowl, combine the wheat flour, salt, and oil. Gradually add water and knead to form a semi-soft dough. Cover with a damp cloth and let it rest for about 5 minutes.
Prepare the Batter:
- In another bowl, mix the wheat flour, chili flakes, chopped coriander, and salt. Add water gradually to create a smooth, thin batter.
Assemble the Dal Fara:
- Divide the dough into 4 equal portions and shape them into balls. Roll each ball into a flat disc, similar to a roti.
- Spread a thin layer of the dal filling over the surface of the rolled dough, leaving some space around the edges.
- Fold the dough over the filling, pressing the edges to seal it tightly.
- Grease a steamer or plate and place the filled rolls inside. Steam for about 15 minutes on medium flame until cooked through.
- Once steamed, remove the rolls and let them cool slightly. Cut them into slices.
- Dip each slice into the prepared batter, allowing excess batter to drip off.
- Heat oil in a frying pan and fry the slices until they are golden brown and crispy on both sides. Remove and drain on paper towels.
