Aloo Pulao is a comforting and flavorful rice dish made with spiced potatoes, while Baingan Ka Raita is a creamy yogurt-based side that adds a delightful tang and spice to your meal. Together, they create a perfect balance, making this duo a family favorite that’s quick and easy to prepare.

I prepare pulao at least once a week as it’s quick and everyone in the family loves it. This aloo pulao is very easy to make and you can also add more vegetables of your choice in this pulao. Baingan ka raita is a must try dish which goes very well with this pulao. You can also east this raita with paratha and roti, it’s just delicious.

Ingredients
  

For Aloo Pulao:

  • 2 cups basmati rice
  • 4 medium potatoes diced
  • 2 medium tomatoes chopped
  • 1 onion finely chopped
  • 8-10 cloves garlic
  • 1- inch piece of ginger
  • 2 green chilies adjust to taste
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 3 cups water
  • Salt to taste
  • Fresh coriander or mint for garnish
  • Oil for cooking

For Baingan Ka Raita:

  • 2 small eggplants baingan, sliced into rounds
  • 1 cup plain yogurt fresh
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/4 tsp hing asafoetida
  • 1-2 dry red chilies
  • Salt to taste
  • Fresh coriander for garnish
  • Oil for cooking

Instructions
 

  • Rinse the basmati rice thoroughly under cold water until the water runs clear.
  • Soak the rice in water for about 30 minutes, then drain.

Make the Baingan Ka Raita

  • Soak the sliced eggplant in water to prevent discoloration.
  • In a bowl, mix yogurt with salt. Set aside.
  • Heat oil in a pan, add cumin seeds, mustard seeds, and hing. Once they start to crackle, add the drained eggplant slices.
  • Sauté until the eggplant is soft and cooked through. Let it cool slightly before mixing it with the yogurt.
  • Garnish with fresh coriander.

Prepare the Pulao

  • In a blender, combine garlic, ginger, green chilies, and a small amount of water to make a paste.
  • In a pressure cooker, heat oil. Add chopped onions and sauté until golden brown.
  • Add the garlic-ginger paste and sauté until fragrant.
  • Mix in turmeric, red chili powder, coriander powder, and salt. Cook for a minute.
  • Add diced potatoes and chopped tomatoes. Sauté until potatoes are slightly tender.
  • Stir in the soaked and drained rice. Mix gently to coat the rice with spices.
  • Pour in 3 cups of water, add garam masala, and check for salt. Adjust if necessary.
  • Close the lid and cook on medium heat for 2-3 whistles or until rice is fully cooked.
  • Once the pressure releases, fluff the pulao gently with a fork.
  • Serve the Aloo Pulao hot, garnished with fresh coriander or mint, alongside the Baingan Ka Raita.
