ganth gobi ki sanji | Khol rabi or Navakol sabji

Ganth Gobi Ki Sabji also known as Kholrabi or navakol at some places is a very healthy and delicious vegetable. With a mild flavor and crunchy texture, kohlrabi pairs perfectly with spices and potatoes, creating a wholesome meal that is easy to prepare. This dish can be served with roti, paratha, or rice, making it versatile enough for any dining occasion. In many places ganth gobi is used as salad but today I have made a very special ganth gobi and aloo curry which I have learned from my aunt.

Ingredients
  

For the Sabji:

  • 5 medium kohlrabi ganth gobi, chopped into pieces
  • 2 medium potatoes diced
  • 1 onion sliced
  • 2 medium tomatoes chopped
  • 7-8 cloves garlic minced
  • 1- inch piece of ginger grated
  • 1-2 green chilies slit (adjust to taste)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Oil for cooking

For Tempering:

  • 1 bay leaf
  • 1 star anise optional
  • 1-2 dry red chilies
  • 1 small piece of cinnamon
  • 3-4 cloves
  • 1 tsp cumin seeds

Instructions
 

  • Start by selecting a fresh kohlrabi with soft, green skin. Peel the kohlrabi and chop it into small, bite-sized pieces.
  • Dice the potatoes and set aside.
  • Heat 1 tablespoon of oil in a pan over medium heat.
  • Add the chopped kohlrabi and potatoes to the pan. Lightly fry them for about 5-7 minutes until they are slightly tender.
  • Remove the vegetables from the pan and set aside.
  • In the same pan, add another tablespoon of oil.
  • Add the bay leaf, star anise, dry red chilies, cinnamon, cloves, and cumin seeds. Sauté for a minute until fragrant.
  • Add the sliced onion and garlic sauté until golden brown.
  • Mix in the turmeric powder, red chili powder and salt.
  • Add fine chopped Tomatoes. And cook till leaves oil.
  • Add ginger garlic paste, coriander powder, zeera powder, black pepper powder, garam masala. mix everything.
  • Add gobi and aloo and saute for 4-5minutes.
  • Pour in 1 cup of water and stir well. Take 2-3 whistles or till gobi is fully cooked.
  • After the pressure releases, open the cooker and check the consistency. If too thick, add a little water and simmer for a couple of minutes.
  • Adjust salt if needed. Cook for an additional 2 minutes.
  • Garnish the sabji with fresh coriander leaves.
  • Serve hot with roti, paratha, or rice.
