Raw Papaya Curry | Kacha Papita Sabzi – Easy & Healthy Indian Recipe
Ingredients
- ½ kg raw papaya peeled, seeded, cut into medium pieces
- 1 tbsp mustard oil
- Salt to taste
- 1 tsp cumin seeds
- 2 dry red chillies
- 1 medium onion finely chopped
- 1 tsp ginger-garlic paste
- 2 tomatoes finely chopped
- ½ tsp turmeric powder
- ½ tsp Kashmiri red chilli powder
- ½ tsp regular red chilli powder
- 1 tsp coriander powder
- ¼ tsp garam masala
- 1 tsp kasuri methi crushed
- Fresh coriander for garnish
- 1 cup water optional, for gravy
Instructions
- Prep Papaya: Wash, peel, and cut the raw papaya. Remove white inner layer to reduce bitterness.
- Boil: Boil papaya in water for 3–4 minutes until slightly tender (not mushy). Drain.
- Shallow Fry: Heat mustard oil, add boiled papaya, sprinkle some salt, and shallow fry for 4–5 mins. Set aside.
- Prepare Masala: In the same oil, add cumin seeds and dry red chillies. Add chopped onion and sauté till golden.
- Add Paste & Spices: Mix in ginger-garlic paste. Sauté till raw smell disappears. Add turmeric, both red chilli powders, coriander powder, and a splash of water.
- Cook Tomatoes: Add chopped tomatoes and salt. Cook until soft and oil separates.
- Combine: Add fried papaya, garam masala, kasuri methi, and mix well. Cook for 2–3 mins.
- Optional Gravy: Add 1 cup water for light curry. Simmer 2 more mins.
- Finish: Garnish with coriander leaves and serve hot.
