In a mixing bowl take all the chopped veggies and add salt. Mix well, cover and keep it aside for 15-20 minutes.
After 20 minutes mix the veggies again and add all the spices, green chillies, ginger garlic paste and coriander and mix it well with spoon.
Now mix the batter with hands like a dough so that it releases water. Add 1-2 tbsp of water if needed.
Batter should be thick not watery. Now heat the oil at medium high heat. Drop small size pakoras in hot oil.
Turn them after some time and cook them from both side till they are crisp and golden brown.
When Pakoras are ready take it out on a tissue paper.Serve hot and crisp pakoras with spicy chutney and ketchup.
