Besan Pista Rolls

Ingredients
  

Mixture

  • ½ cup Ghee
  • cup Gram Flour
  • ¼ tsp Cardamom Powder
  • 2 tbsp Pistachio fine chopped
  • 4 tbsp Cashew & Almonds

Besan Pista Rolls

  • ¾ cup Powdered Sugar
  • Pistachio fine chopped

Instructions
 

Mixture

  • In a non-stick pan add melted ghee, besan mix and let it cook on low flame for 20 minutes.
  • Press the besan with a spatula so that it absorbs the ghee properly.
  • Keep cooking till besan becomes loose and dark.
  • Once besan becomes darker in color and loose then add cardamom powder, pista, cashew and almond powder, mix everything well and turn off the heat.
  • Transfer in the bowl and let it cool down till it becomes lukewarm.

Besan Pista Rolls

  • Once the mixture is cool add sugar in batches while mixing it continuously.
  • Now mix the mixture with hands and make a dough of it.
  • Now let it rest in the fridge for 10 minutes.
  • After 10 minutes take a small portion and make a cylindrical shape of it by rolling between hands.
  • Now on a board or plate spread fine chopped pista and gently roll the besan roll on it so that the pista presses in the besan roll.
  • Even out the edges and decorate with silver foil.
  • Leave at room temperature for 4-5 hours for the rolls to harden.

Notes

Shilpi’s Quick Tricks
  • Never add sugar in hot besan or else the sugar will become chashni.
