Remove the excess water from it and peel the potatoes.
With the help of a grater grate all the potatoes into a bowl.
In the same mixing bowl add besan, turmeric powder, red chilli powder, garam masala, dry mango powder, black salt, chaat masala, asafoetida, salt and mix it well and make a smooth dough without using water.
Grease hands with oil and apply it gently on the dough.
Cover and let it rest for 10-15 minutes.
Aloo Besan Sev
Grease sev machine with some oil, now put some dough into the machine.
Heat oil on medium high heat and check by putting a little dough in it and if you see bubbles means it is ready.
Extrude sev in circular direction, once firm flip it and cook from the other side too.
Now remove it once cooked and let it cool down completely.
Once cold crush them and store it in an air tight container.

Don’t mash the potatoes too much or else the dough won’t come fine.
Don’t use water to knead the dough.
If the dough is sticky then use a little more gram flour.
