Instructions
In a pan add ghee and let it melt. Once ghee melts add in dalia and roast on medium flame till golden brown.
As soon as it turns golden brown add boiling water and let it boil. Once boiling reduce the flame to lowest, cover and cook for 15-20 minutes.
Add sugar or jaggery and increase the flame to full and mix well. Cook till dalia absorbs sugar completely and cook for 5-7 minutes.
Once daliya is ready it becomes dark in colour and thick turn off the heat. Add in garnishing, mix well and leave it to cool a bit.

Shilpi’s Quick Tricks
Don’t use fine grain daliya.
If daliya is roasted perfectly then laapsi will taste better.
You can also make it in cooker.
If you are making laapsi in cooker then add only 1.5 cup water in ½ cup daliya.
After 15 minutes daliya should be soft if it is not then add in more water and let it cook.
